The honey process adds an extra subtle sweetness to this limited-edition batch. Unlike traditional processing methods (which fully remove the coffee bean mucilage), honey processing leaves a portion intact—creating a sticky honey-like texture during the drying process. Perfect for those who appreciate a gently sweet and mildly fruity coffee, without the intense fruit-forward flavor profile created through traditional processing methods.

Aloha Star is a small family-owned and operated farm, dedicated to every step of the coffee process from growing, harvesting, processing, and roasting. Nestled in South Kona, the combination of elevation, temperature, rainfall, and volcanic soil allows them to grow their high-quality beans. 

 Armando and Karina Rodriguez started their first farm in 2004 when it was a macadamia nut orchard with 1,200 trees. In 2013, they started planting 200 "keiki" coffee trees. Today, they continue to plant more trees every year and have over 8,000+ trees planted.

THE HONEY PROCESS

Most specialty coffee tends to be processed using the washed process which provides a clean and bright tasting experience. Washing the coffee beans consists of removing each layer of the coffee cherry before its dried. With the honey process, once the beans are picked, the skin is removed but a specific amount of the fruit pulp is intentionally left on the beans before they are sent for drying. 

 Honey processed coffee has a similar flavor profile to our washed process coffee but with an extra sweetness that comes from the coffee fruit pulp drying on the bean. It is great for anyone who likes subtly sweeter and fruitier coffees without a super fruit-forward profile of the natural process.

Meet Aloha Star Coffee Farms

Nestled in the picturesque landscape of Honomalino Acres in South Kona, Aloha Star is a cherished family-owned and operated estate, dedicated to crafting premium 100% Kona coffee for over a decade. The heart and soul behind the farm are Armando and Karina Rodriguez, who began their journey in 2004 with a macadamia nut orchard and expanded into coffee cultivation in 2013 with 200 keiki coffee trees.

Today, their commitment and passion have resulted in over 8,000 trees. Their award-winning coffees have consistently ranked among the top 10 in both the Kona Coffee District and the State of Hawaii since 2018. With a deep commitment to sustainable practices, Aloha Star prioritizes the health of their land and community, embodying the true spirit of aloha with every cup.

WHY KONA

Far above the hubbub of Ali’i Drive, nestled along the slopes of Hualalai and Mauna Loa—the latter being the world’s largest active volcano—lies a curious region of Kona, Hawaii: The Kona Coffee Belt. Depending on who you ask, this area stretches anywhere from 26 to 30 miles wide, a tiny haven of lush mountainside that creates a coffee as rare and rich as the volcanic island soil it’s grown in. Remarkably, less than 1% of the world's coffee is grown in Hawaii, making Kona coffee exceptionally rare and sought after.  

Authentic Kona coffee offers a distinct taste and texture unlike any other. Originating from the Kona Typica variety, these coffees are celebrated for their deep chocolatey richness, exceptional balance, and unparalleled smoothness. Notably, they also possess a pleasantly low acidity, making every sip gentler on the palate. The medium and light roasts introduce delicate touches of fruit and floral aromas, providing a diverse range of flavor profiles.
